The Dry-Aging Process for your deer:

Key Processes & Changes
• Enzymatic Breakdown: Natural enzymes in the meat break down tough connective tissues and proteins, making the meat more tender and easier to digest.
• Moisture Loss: Water evaporates from the meat, concentrating its natural flavors and intensifying its richness.
• Oxidation: The meat's fats oxidize, developing nutty, buttery, and complex notes, while the breakdown of proteins creates savory, MSG-like flavors (glutamate).

The Controlled Environment
• Temperature: Kept just above freezing (around 32-39°F or 0-4°C) to slow bacterial growth.
• Humidity: Controlled to allow moisture loss without drying out the meat too quickly, typically around 80-85%.
• Airflow & Air Quality: Constant circulation and filtered air prevent harmful bacteria and manage the aging process evenly.

Modern Gun Season opens Saturday! Are you looking for a processor for your harvest? Come see us at Trinity Acres Farm. We take your deer from field to the freezer. We skin, gut, and dry age your meat for a more flavorful, less gamey end product. Meat is vacuum sealed for better freezer life. We get a hanging weight and track your yield to insure you get the most for your money! And we label your deer so the meat you bring is the meat you take home! We are unable to take a quartered deer this season, make it easy on yourself and just bring it from the field!
