Evansville Trinity UMC In the historic heart of downtown Evansville, Ind., Trinity offers opportunities for spiritual renewal and growth through worship, fellowship, and service.

The purpose of Trinity United Methodist Church is to cultivate and nurture the Spirit of Christ within our church family and to extend this Christian ministry to our community and the World. Our history dates back to 1825, when our congregation began as the first Methodist class in Evansville. Each week we gather in our beautiful English Gothic sanctuary, built during the Civil War. Regardless of one’s age, race, life-story, or standpoint, each unique individual is welcomed within our church.

As Program Manager for Urban Seeds' Nourish initiative and Market on Main, Julia brings a passion for building inclusive spaces and connecting people to the resources they need. She comes to us from Ivy Tech Community College, where she served as the Assistant Director of the Academic Advising Center.

She is a lifelong veggie lover with fond memories of digging in her grandparents’ gardens. Julia also loves making and teaching art and puts her creativity into everything she does. Please say hi at the market! She is excited to grow with this community, and she can’t wait to meet you.

Urban Seeds’ Seasonal Side Bundle was launched through our Nourish initiative to empower Evansville residents to prepare fresh food more often. This bundle includes a mix of produce and pantry ingredients to create a complete vegetable-forward side dish. This week we’re offering a vegan-friendly Bok Choy Soba Noodle with a creamy and crunchy peanut sauce. 🥬🍜

Ingredients:

- 2 heads of baby bok choy
- 1 red bell pepper
- 1 lime
- 2 cloves of garlic
- 1 serving of dried soba noodles
- 1/4 cup crunchy peanut butter
- 1 tbsp. soy sauce
- ½ tsp red pepper flakes
- ⅛ tsp salt
- Cilantro (to garnish)
- Green onion (to garnish)

Instructions:

1. To make the peanut sauce, combine crunchy peanut butter, soy sauce, the zest and juice of 1 lime, 1 grated clove of garlic, red pepper flakes, and salt. Thin out as needed with warm water.
2. Bring a medium pot of water to a boil, and heat vegetable oil in a medium pan. Cut bok choy and red bell pepper into half inch pieces. Smash the second clove of garlic and saute with the vegetables for 3-5 minutes or until bok choy is vibrant green and tender.
3. Add soba noodles to boiling water and cook for 4 minutes or until cooked through. Drain.
4. Remove the smashed garlic from the sauteed vegetables, add the soba noodles, and toss with peanut sauce. Garnish with chopped cilantro and green onions.
