🍗🥔 Chicken S***e
A hearty Caribbean-inspired chicken s***e with tender bone-in chicken, potatoes, carrots, corn, and bell pepper in a light, savory broth brightened with fresh lime.
đź›’ Ingredients:
* 3 lbs bone-in chicken pieces, preferably drumsticks and thighs
* 1 tbsp vegetable oil
* 1 medium yellow onion, chopped
* 3 garlic cloves, minced
* 8 cups low-sodium chicken broth
* 1 cup water
* 2 tbsp fresh lime juice
* 1 tbsp tomato paste
* 1 tsp dried thyme
* 1 tsp paprika
* 1 tsp ground allspice
* 1 tsp kosher salt, plus more to taste
* ½ tsp black pepper
* ÂĽ tsp crushed red pepper flakes, optional
For the Vegetables:
* 2 medium potatoes, peeled and cut into 1½-inch chunks
* 2 large carrots, cut into thick rounds
* 2 ears corn, each cut into 3 pieces
* 1 green bell pepper, cut into large chunks
👩‍🍳 Directions:
1. Pat the chicken dry and season with salt, black pepper, paprika, thyme, and allspice.
2. Heat the vegetable oil in a large Dutch oven over medium-high heat.
3. Brown the chicken for about 3 minutes per side, working in batches if needed, then transfer to a plate.
4. Reduce the heat to medium and add the onion. Cook for 3–4 minutes until softened.
5. Add the garlic and tomato paste and cook for about 1 minute.
6. Pour in the chicken broth and water, scraping up the browned bits from the bottom of the pot. Add the red pepper flakes if using.
7. Return the chicken to the pot, bring just to a boil, then reduce to a gentle simmer. Partially cover and cook for 20 minutes.
8. Add the potatoes, carrots, and corn and simmer uncovered for another 15–20 minutes.
9. Add the green bell pepper and cook for 5–7 minutes more, until the vegetables are tender and the chicken is cooked through.
10. Remove from the heat and stir in the fresh lime juice.
11. Taste and adjust the salt, pepper, or lime as needed.
12. Let the s***e rest for 5 minutes before serving with plenty of broth and vegetables.
đź’ˇ Pro Tip: Keep the broth at a gentle simmer instead of a hard boil so the chicken stays tender and the potatoes hold their shape.
