Choc on whopper pie recipe

Who remembers Maine Whoopie Pies? Do you Make them? This is an old recipe that was in a Starks cook book the filling is peanut butter.

For the Cookies

1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon coarse salt
1 tablespoon unsalted butter, softened
1/4 cup vegetable shortening, like Crisco
1/2 cup granulated sugar
1/2 cup packed dark-brown sugar
1 large egg
1 cup whole milk
1 teaspoon pure vanilla extract

For the Filling

2/3 cup natural, creamy peanut butter
1/2 cup (1 stick) unsalted butter, softened
3/4 cup confectioners’ sugar
Coarse salt, to taste (I like quite a bit for the contrast)

Heat the oven to 375 degrees F. Sift together flour, cocoa powder, baking soda, and salt into a small bowl; set aside.

Put butter, shortening, and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on high-speed until smooth, about 3 minutes. Add egg; mix until pale and fluffy, about 2 minutes. Mix in half the flour mixture, then the milk and vanilla. Mix in remaining flour mixture.

Drop rounded tablespoons of dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake until cookies spring back when lightly touched, 12 to 14 minutes. Let cool on sheets on wire racks 10 minutes. Transfer cookies to wire racks using a spatula; let cool completely.

To make the filling: Put peanut butter and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on high-speed until smooth. Reduce mixer speed to low. Add confectioners’ sugar; mix until combined. Raise speed to high, and mix until fluffy and smooth, about 3 minutes. Season with salt, as needed.

Assemble cookies: Slather filling on the bottom of 1 cookie. Sandwich with another cookie. Repeat with remaining cookies and filling. Cookies can be refrigerated in single layers in airtight containers up to 3 days. Bring to room temperature before serving.

The Winthrop Congregational Church is organizing a day for collection and recycling of old and broken electronics. eWaste will be accepted from 9:00 a.m. to 2:00 p.m. on Saturday, August 11, in the Winthrop Grade School parking lot on Highland Street in downtown Winthrop . This event is open to residents from any Maine community and items may be recycled with donations gratefully accepted.
The Winthrop Congregational Church is partnering with eWaste Recycling Solutions, LLC (ERS) of Auburn , which will bring a team to pack and transport televisions, computers, monitors and other electronic devices. ERS is approved by the Department of Environmental Protection and will man the collection site at no cost to the church. Maine is one of the few states that mandates electronic waste be recycled. Proper recycling and disposal of e-waste removes tons of hazardous waste, like lead, cadmium and mercury, that otherwise is often buried or incinerated.
Church members will help with traffic, parking and unloading vehicles. The primary focus is on collecting electronic devices and lighting and other universal waste, including televisions (all sizes), CPUs, monitors, copiers, printers (and ink cartridges), fax machines, scanners, laptops, stereos, keyboard/mouse/peripherals, DVD players, cell phones, remote controls, VCRs, projectors, digital cameras, tape players, PDAs, speakers, telephones, two-way radios, answering machines, camcorders, CD players, DVD players, electric typewriters, game systems, pagers, microwaves and toner cartridges. (Appliances and white goods, Freon-bearing items, fluorescent bulbs and mercury-bearing items will NOT be accepted.)
Recycling is available for Maine individuals. As a result of passage of L.D. 981, businesses may deliver covered items at this event. Businesses with fewer than 100 employees are exempt from fees while businesses with more than 100 employees may drop off items for a fee. Any business wishing to deliver more than seven (7) covered items, or who would like information on fee structures, must call Rick Clark at ERS at 615-3099 prior to the event.
