The only way to make any sense of Judaism without the Temple is Orthodox Christianity. The best book I've read on the purpose of the Temple and its sacrificial system as well as how that ties to Christianity is this: https://www.amazon.com/Welcoming-Gifts-Sacrifice-Bible-Christian/dp/1955890161
The first 58 pages are relatively slow but are vital in establishing the paradigm from which Fr. Jeremy Davis then presents the evidence. His main sources in this, outside of the Bible, are the commentaries of St. Cyril of Alexandria and St. John Chrysostom's homilies and commentaries.
