Salad: Chick peas, chopped tomatoes, cucumbers, and limas over greens, chive vinaigrette

Entrees (Choose 1):

• Kathy’s Taco chicken soup, cornbread

• Chipotle chili with spiced tofu crumble, oyster mushrooms, cornbread (GF, VG)

• Moroccan saffron chicken, rice and sweet potatoes

• Oven roasted pork cacciatore, pasta, focaccia

• Green chili enchilada casserole, with peppers and 3 cheeses (VG)

mashed potato and veg, roll

• Thai Red Vegetable Curry with rice (GF, V)

• River’s White Bean Soup, roll (GF, V)

• Carrie’s Quiche: Turkey sausage/sweet peppers, or
Vegetable- both w/side of roasted brussel sprouts (V)

• Salmon/Shrimp Cakes, creamy shrimp sauce, mashed potato,
