Early Tuesday morning, the Summer Serve team headed out to John’s Island to the Farm at Kiawah River to glean the fields with Wyatt, a representative from Fields to Families and Charleston-based personal chef.
Fields to Families works with local farmers to reduce food waste through gleaning crops that weren’t picked in time for an ideal harvest. The collards and green beans picked at the farm go to community resource centers like The Pink House to be distributed to those in need. It was a full circle moment for the campers, as Chef Wyatt was also the project leader at The Pink House on Monday afternoon.
After the morning of gleaning, Chef Wyatt served a farm to table lunch with hand picked ingredients, including blackberry barbecued chicken thighs, with the berries from bushes less than 100 feet from where the group ate lunch.
