Vegetarian is not necessarily automatically healthy. People gathered for the first session of Diabetes Undone, a healthy eating lifestyle class for those with diabetes (high blood sugar), high blood pressure, high cholesterol, poor blood circulation or heart disease that helps reverse these conditions (consult your physician before beginning any new diet or new exercise and during the course of the program). Each class is part education and part practical experience.
Tonight introduced attendees to a healthy spicy chili recipe from the course provided cookbook from Plant to Plate (Diabetes Edition). The recipe is easily customizable to taste for more or less spice, variety of bell peppers (red or green etc) and ratio of bean types as demonstrated by tonight's cooks who varied their recipes slightly. For example, consider adding both red and white (cannellini) kidney beans like one of our chefs did tonight.
If you haven't attended before, please consider attending the program's 7 future classes. The next class is September 17 at 6pm at the Mount Dora SDA church social hall, located at 18440 US Highway 441 in Mount Dora, Florida. Each class runs approximately 2 hours. The course costs $70 for the books and food (online course comparison is $200 without food/cooking demonstration).
If you have attended before and have your books, consider a refresher program for a $20 fee to cover the cost of food; you use your previous workbook and book.
