This dish is not only quick and easy to make but also packed with nutritious veggies and a savory-sweet sauce that will leave your taste buds begging for more.

Recipe:

1. Start by preparing your peppers be de-seeding them. Once de-seeded, cut the peppers in half.
2. Combine the water, sugar, Chinese black rice vinegar, and a pinch of salt in a bowl and set aside. Heat the wok over medium heat and spread peanut or avocado oil around the perimeter of the wok. Add the peppers to the wok and spread them around evenly so they are all in contact with the wok surface.
3. After about 1 minute, start tossing the peppers with your spatula, making sure the peppers cook evenly. Turn the temperature down if the peppers look like they are starting to burn. Continue tossing and turning the peppers for another 5 minutes to make sure all sides get a nice "tiger skin" sear.
4. Once the peppers have that uniform "tiger skin" look, turn the heat up to medium high and add in the vinegar mixture. Stir fry for about 30 seconds until the sauce is reduced slightly. Serve with a sprinkling of sea salt.

Peppers are low in calories but high in vitamin C and other antioxidants that help boost your immune system and keep you healthy.

So, next time you're looking for a flavorful and nutritious side dish, give this stir-fried pepper recipe a try. Your taste buds (and your body) will thank you!

This dish is stir-fried eggplant with string beans. It has a sweet and sour flavor with a hint of spiciness. It's important to use Chinese eggplant for this recipe because their skin is thinner.

Recipe:
1. To preserve its color, cut eggplant into thick strips and flash fry in oil for about 2-3 minutes. After frying, set it aside and allow the heat to cook it through slowly.
2. Cut the green beans into pieces and then quickly fry them until the skin begins to blister. Set them aside.
3. In the pot, combine Szechuan peppercorns, ginger and a little bit of Furu (fermented tofu) until everything starts to sizzle. If no Furu is available, then you can use Miso instead.
4. Add the eggplant and green beans, then add soy sauce, brown sugar, and black vinegar to taste in a 1/2 cup : 1 teaspoon : 1/4 cup ratio; everyone's vinegar will have different ranges of acidity, so it depends.
5. Add 1/4 cup of water and cover the pot. Once the eggplants are tender, serve them with fresh cilantro.

Enjoy!

Chinese Cold Pickled Potato, also known as Liang Ban Tu Dou Si, is a popular Sichuan-style dish that's commonly served as a cold appetizer or side dish.

1. Wash the shredded potato with a strainer under running water to remove extra starch and obtain a crunchy texture.
2. In a bowl, mix shredded potato with coriander. In a separate bowl, combine salt, sugar, light soy sauce, and vinegar. Set both bowls aside.
3. Heat oil in a pan until it's almost smoky. Add Sichuan peppercorn, green onion, dried chili pepper, and chopped garlic to the hot oil. Toast the aromatics until fragrant.
4. Immediately add the sliced potatoes to the pan along with the sauces from the separate bowl. Stir-fry the mixture under high heat for a short time, ensuring the potatoes retain their crispiness while being cooked through.
5. Once cooked through, remove the pan from heat and serve the dish directly.

The resulting dish is refreshing, tangy, and slightly spicy, making it the perfect palate cleanser or accompaniment to heavier dishes. The potato slices will still be crunchy, providing an interesting contrast to the flavor.

3. Bring a large pot of water to a boil and cook sweet potato noodles (easily found in Asian stores) and one Bok choy. Once cooked, drain and rinse with cold water to stop the cooking process.
