As summer is quickly coming to a close I have a recipe for banana split bites!

Banana Split Bites
Ingredients
3 Bananas
1/4 lb Cored Pineapple
6 Strawberries
1 cup Dipping Chocolate
1/4 cup Chopped Peanuts
12 Popsicle Sticks or skewers
Instructions
Cut strawberries in half.
For each strawberry half, cut an equal size piece of banana and pineapple.
Place pineapple on first, then banana and lastly strawberry.
Place in freezer for 10 minutes.
Line a tray with wax paper or parchment paper.
Put chooped nuts in small plate to use for dipping.
Melt chocolate by heating in microwave for 30 seconds, stirring and repeating until melted and smooth.
Dip cold fruit in chocolate, then into nuts, then place on prepared tray.

Running out of ideas as Passover is about to come to a close? Check out this cauliflower pizza
Cauliflower Pizza

A must for anytime, but especially during Passover. This recipe is super simple and does not even require exact measurements. The recipe for the crust makes enough for one person but can easily be doubled as long as you know basic math skills. You can top it with anything you like.

• 1 cup cauliflower shredded ( will use cauliflower rice or something if I am wanting something lighter or easier to cook when there is a time crunch)
• 1 cup shredded cheese of your choosing (I have used both cheddar and mozzarella)
• 1 egg
• a little bit of your favorite seasoning and garlic if you are so inclined

Directions:

1. Preheat oven to 450 degrees Fahrenheit.
2. Spray a cookie sheet with non-stick spray.
3. In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan.
4. Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
5. Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
6. Place under a broiler at high heat just until cheese is melted.

Even though Purim is behind us, that doesn't mean we have to stop eating Hamantaschen!
Ingredients
1 stick unsalted butter or margarine, softened
½ cup sugar
3 eggs
Grated zest of one small orange
2 cups flour
1½ teaspoon baking powder
¼ teaspoon salt
Fillings (any of the Solo fillings or a favorite jam will work fine)
Instructions
Preheat oven to 375°F.
In the bowl of an electric mixer, beat the butter and sugar until well blended.
Beat in 2 eggs and orange zest, blending thoroughly.
Add the flour, baking powder, and salt, then blend until dough is smooth. it’s best to wrap dough in plastic wrap and refrigerate until chilled, but you can go directly to the next step if you’re in a hurry…
Transfer to floured surface and divide dough into three or four portions for easier handling.
Roll to about 1/4 inch thick—not too thin, or cookies will spread open while baking.
Cut into 2 1/2-inch rounds (I use a juice glass).
Place a teaspoon of filling in center of each round. Fold edges toward center to form a triangle, leaving just a bit of filling visible. Pinch edges to seal.
Place the hamantaschen about an inch apart of lightly greased, foil-lined baking sheet. Brush with remaining egg, lightly beaten.
Bake about 10 minutes or until golden brown. Transfer to racks to cool.

Is there better way to warm up than with a hot bowl of soup? Let's face the Wyoming cold together with a Dairy Carrot Soup.
You will need a hand blender for this recipe
Ingredients:
2 onions, diced
2 cloves garlic
8–9 large carrots, thinly sliced
1 red pepper, diced
1 potato, peeled and cut into chunks
4 cups vegetable broth or 4 cups water plus 3 and 1/2 teaspoons vegetable soup mix
4 cups water
1 and 1/4 cups milk or water
salt and pepper, to taste
1/4 teaspoon dried ginger (optional)
Instructions:

In a large pot, sauté onions and garlic. Add carrot slices and diced red pepper. Add potato chunks and sauté for another eight to ten minutes.

Fill pot with vegetable broth, water, and milk. Cook for one and a half hours, adding salt and pepper to taste.

Blend with hand blender.

To serve, sprinkle individual bowls with a dusting of ginger, if desired

What is Hanukkah without Latkes?
You will find below a recipe that is not only kosher but is also gluten-free!
Ingredients:
8 grated potatoes
2 cooked potatoes, peeled and mashed
2 onions sauteed in 2 tablespoons oil
salt, to taste
pepper, to taste
Garlic Dill Mayo Dipping Sauce
1/2 cup of vegan mayo
1/3 cup of chopped dill
1 clove garlic, finely minced or 1 cube Gefen Frozen Garlic
squeeze of half of lemon
pinch black pepper
1/2 teaspoon Himalayan pink salt, or to taste
Directions
Prepare the Latkes
1.Cook two potatoes in water until soft. Drain the water and mash.
2. Combine all ingredients: grated potatoes, mashed potatoes, sauteed onions, salt, and pepper.
3. Arrange patties on an oiled Gefen Parchment Paper. Spray some oil on top and bake on 375 for 25 minutes, Flip once and bake for another 10-15 minutes.
4. Sprinkle some salt and serve immediately!

Prepare the Dip
1.
Whisk everything together until combined. You can add more water or lemon to get it to the consistency that you’d like.
