Morning all! In a rush in morning... here is a healthy quick breakfast:

1 scoop of vanilla Vega
1/2 banana
1 teaspoon all natural peanut butter
1 tablespoon blueberry
10 oz of coconut/almond milk
2-3 ice cubes
Blend and enjoy

Jasmine Rea's : cucumber pasta salad

For the cucumber salad.

1 English cucumber
1/2 vegan mayo
1/2 sweet onion
2-4 tbsp dried dill w**d
1/4 tsp garlic powder
2 tbsp mustard
1 box of spiral pasta. (I used the healthy choice veggie noodles)
Salt and pepper to taste
2 tsp white wine vinegar

Cook the noodles and rinse with cold water. Then put in fridge to cool

In a small bowl put mayo, dill w**d, garlic powder, salt and pepper, mustard and white wine vinegar

Dice onions and cucumber, (any kind of cut)

Mix it all together. Add more mayo if desired.

Jasmin Rea's - Spaghetti squash chow Mein

I cut a whole spaghetti squash is half and took out the middle. Put it in the oven with some water at the bottom. 400f for about forty minutes. (You can also microwave it)

For the sauce is 2 tsp of grated ginger, 2 cloves of garlic, I put a little bit of brown sugar with 1/4 cup of coconut aminos.

In a skillet I put 1 whole onion, 3 stalks of celery, and two carrots. Sautéd them and then added everything together.

You may have to add more coconut aminos depending how you like it.

Fall Potato Hash: Amazingly simple Fall recipe for any occasion.

3 Diced russet potatoes skin on
1 tablespoon of minced garlic
3 diced green onions
1 teaspoon of cayenne pepper
2 Roma tomatoes
6 large white mushrooms sliced
1 tablespoon of extra virgin olive oil or coconut oil
1/4 cup of Gardeninn beefless crumbles

Heat medium saute pan add oil, garlic, 2 diced green onion. Saute until tender. Add diced potatoes and crumbles, and mushroom, add cayenne , salt and pepper to taste,cook until potatoes are tender. Add freshly diced Roma tomatoes last green onion. and serve.
