🥔🧈 ☘ Colcannon: A Hearty Taste of Irish Tradition 🇮🇪
Colcannon is one of Ireland’s simplest and most enduring dishes. Built around potatoes, seasonal greens, and plenty of butter, it was a staple of rural homes and was especially associated with autumn, winter, and Hallowe’en, when families gathered around the table to share what the land provided.

Ingredients
🥔 2 pounds floury potatoes, peeled and cut into chunks
🧈 6 tablespoons good Irish salted butter
🥬 4 cups lightly packed chopped kale or cabbage
🧅 3 green onions, thinly sliced
🥛 ½ cup full-fat milk or buttermilk
🧂 Salt and black pepper, to taste
🥔 Boil the potatoes
Place the potatoes in a large pot, cover with cold water about an inch above the potatoes, and add a pinch of salt. Bring to a boil, then simmer for 15 to 20 minutes, until a fork slides in easily. Drain well.
🥬 Prepare the greens
In a separate pot, melt the butter over medium heat. Add the kale or cabbage and cook for 3 to 4 minutes, stirring gently, until just wilted and tender. Stir in the green onions, reserving a small handful for garnish, and cook for one further minute.
⚪ Combine and mash
Add the drained potatoes to the pot with the greens. Pour in the milk, season generously with salt and pepper, and mash until creamy but not overworked. Adjust with a little extra butter or milk if needed.
🍽 Finish and serve
Spoon the colcannon into a warm serving bowl. Make a small well in the centre, add a pat of butter, and scatter with the reserved green onions. Serve immediately while steaming hot.
