My own wellness journey has seen progress, with a four-pound weight loss, thanks to experimenting with new recipes and supplements. Nevertheless, the fear of reinjury is holding me back from returning to the gym. I've come to realize that seeking expert advice is crucial to regaining my physical strength. Tomorrow at 6 am I embark on a new journey with a Trainer. Physical therapy was great and helped a lot. But this will take me to the next level. I am super excited.

I have developed an innovative method for cooking stuffed peppers without rice, incorporating leftover components. The onions, avocado, tomatoes, cheese and chicken were leftovers from other meals, thereby eliminating unnecessary waste. They turned out so yummy! 😋 😍

I successfully crafted a 2-ingredient bagel with minimal carbs today. The bagel's soft texture was more like bread. The bagels paired well with cream cheese. While it lacked the chewiness I prefer in bagels, it made for a great bread alternative. Further experimentation will focus on achieving a chewier consistency.

Update:
As of June 27th, I successfully completed physical therapy and celebrated by ringing the bell, marking the culmination of an intense two-month and one-day recovery period. This journey has been mentally taxing, but my faith has been a constant source of strength. I frequently sought understanding from God regarding the challenges I faced, especially when I experienced significant weight gain due to insulin-induced edema resulting from increased insulin dosages during my limited mobility. I am pleased to report that I have lost the additional twenty pounds and two pounds from my pre-injury weight. While my mobility is gradually improving, I recognize that my physical resilience and strength have yet to fully recover. I am assured that, with persistence and hard work, I will regain my former vigor. In the face of frustration, I remain steadfast in my trust that my experiences serve a higher purpose. I WILL
COUNT IT ALL JOY!

Update:
I finally am starting to feel like myself and walking normally. Woop woop. Hopefully soon I'll be released from physical therapy.

Update:
I am currently in my eighth week of physical therapy. My therapist has recommended an additional six-week extension, which is pending insurance approval. I anticipate a decision by this Friday. Hopefully, they will grant the request. While I have shown improvement, I continue to experience difficulties with stairs and daily tasks. Please pray that insurance say yes.

Update:
After completing six weeks of physical therapy, I have experienced substantial improvement. My therapist has determined that an additional week of treatment is necessary, with a focus on hip muscle strengthening to improve my gait and posture. The progress of my back muscles has been remarkable, and my therapist is pleased with the results. I am thankful for the ongoing healing process and anticipate a return to normalcy soon. I appreciate your prayers.

Update:
I am shocked by the extent of the damage I have inflicted upon my body in such a short span. The physical therapist has informed me that the recovery period will be six weeks. I had no idea that it was possible to lose muscle strength at such an alarming rate. The healing process is advancing gradually, in small increments, baby steps. Ultimately, I will regain my strength. I will be stronger in the end.

Here's my clever variation on a cherished family recipe. My family is particularly fond of homemade Chicken Hibachi, which I prepared using my standard approach. When cooking for my family or myself, I always select healthy oils, and this dish was cooked with Avocado oil. The rice is typically the primary contributor to the high caloric content of this meal. To resolve this issue, I used frozen cauliflower rice and baked it in the oven with the other vegetables. Yes, that's yum-yum sauce on top. By excluding the rice, the impact on blood sugar levels was minimal, and I didn't experience any bloating. My husband was pleased with the cauliflower rice and enjoyed it. Just thinking about this dish is making me crave it again. The other vegetables incorporated into this recipe include onions, sweet red peppers, broccoli, snap peas, carrots, and water chestnuts.
