Oct 25th - Hurley's, Betz's and New HRC supported Andrea Bravo. We served 300 Pieces of Publix Fried Chicken, 8 trays of Cilantro Infused Rice from Viva Chicken, Nectarines and Apples, Assorted Pastries and Waters. We served 158 Patrons.
NOTE: Last week of the month you can expect higher volumes of people.

Oct 18th—Victoria Hurley and Marvin Ridge HS friends with support from Brad Chana. I am so proud of the Marvin Athletes who led Friday night. The Veterans like Vic, Alex, and Izzy led the way. They served 300 Pieces of Publix Fried Chicken, 8 trays of Ciliantro-infused Rice from Viva Chicken, 20 lbs of Halloween Candy, Oreos, Bananas, Tangerines, and Water.
Served 145 Patrons.

Sept 13th. The Hanks and Friends - Served 173!! Patrons - Pot Roast Dinner.

Meat
Approximate amount of meat.
2x12lb rib roasts slow cooked on outside grill for 8hrs to 204F internal temp
2x10lb beef tenderloin slow cooked in dutch oven 4-5hrs until 204F internal temp
5x4-5 lb briskets - slow cooked in dutch oven 4 hours @ 275F 204F internal temp
The drippings were strained and refrigerated to make a roux and about 3-4 gallons of gravy
Meat was cut and refrigerated yielded 5 covered large aluminum trays. (warmed on day of serving using oven and 1-2 cups of boiling water) Meat was moist and tender with no residual water in tray.
Gravy Recipe: 3 1/8 cups of fat drippings (refrigerated and skimmed off the top)
Add 4 11/16 cups of flour to make a roux and cook at 350F in open Dutch oven for 1-2 hours until brown and toasty.
Add liquid drippings plus water and beef bouillon to yield 13L (11 quarts) whisk while slowly adding liquid. Roast one full head of garlic and puree with a bit of gravy and then add to main gravy. Other seasonings to taste.

Sides
27 cups of cooked rice
8 quarts of mashed potatoes. Four boxes of instant potatoes (could have been doubled).
9 family size bags of frozen veggies. Peas and carrot medley plus corn Could have easily been 2x

Dessert
4 full sized layer cakes (Sam’s Club or Costco size)
2 rectangular 16” opera cakes
24 cinnamon rolls
160 waters
60lbs of bananas (13 bunches)

Sept 6th - Steele Creek Church - 126 Patrons
We served Hot Dogs and Beans with Sides and Beverages. We gave communion to 3 patrons and had another church with them that provided prayer and candy for everyone.
There were a couple requests for Bibles from patrons.
