Crunchy Southwestern Chicken Wrap Recipe:
Ingredients:
1 large chicken breast, cooked and shredded
1/2 cup black beans, rinsed and drained
1/2 cup corn kernels (fresh, canned, or frozen)
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
2 tablespoons diced red onion
1/4 cup chopped fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper, to taste
1/4 cup mayonnaise
1 tablespoon lime juice
4 large flour tortillas
1 cup shredded lettuce
1 cup shredded cheddar cheese
Sliced avocado, for serving (optional)
Instructions:
In a large mixing bowl, combine the shredded chicken, black beans, corn, diced bell peppers, red onion, cilantro, ground cumin, chili powder, salt, and pepper. Mix well to combine.
In a small bowl, whisk together the mayonnaise and lime juice to make the dressing.
Spread the dressing evenly over each flour tortilla.
Divide the chicken mixture evenly among the tortillas, spreading it out in the center of each tortilla.
Top each tortilla with shredded lettuce, shredded cheddar cheese, and sliced avocado, if using.
Fold the sides of each tortilla inward, then roll up tightly to form a wrap.
