Erica Hazlett’s fight against human trafficking began when, as a social work intern, she met an 11-year-old girl being trafficked by a 29-year-old man—and discovered there were almost no resources available to help her.

“And so I decided to start an organization that would help to rescue and restore children who had been trapped in human trafficking all over the world,” Hazlett said.

That organization became Future Voices. Hazlett says she has helped recover more than 450 children worldwide, and her work has led to six homes for trafficking survivors in five countries. She now leads the Texas-based organization with her husband, Bob Hazlett.

Today, she is also advocating for stronger legal protections for trafficked children and the people who work to protect them.

Ethan Gutmann has spent years investigating forced organ harvesting in China, including allegations involving Falun Gong practitioners and, more recently, Uyghurs and Kazakhs. Based on his research, Gutmann estimates that tens of thousands of Uyghurs and Kazakhs may be killed for their organs each year—an ongoing loss of life he describes as “the greatest loss of life on the planet.”

A senior fellow at the Victims of Communism Memorial Foundation, Gutmann has investigated and documented the issue extensively. He is the author of two books examining forced organ harvesting in China, "The Slaughter" and "The Xinjiang Procedure."

Made up of over 95 percent water, cucumbers are one of the most hydrating foods you can put on your plate. The other five percent consists of nutrients that help skin age slower and bowels move faster as long as the peel remains. A standard unpeeled cucumber about 6 to 7 inches long contains approximately 40 percent of the daily value of vitamin K, close to 10 percent of potassium and vitamin C, fiber including pectin, and carotenoids mainly in the skin.

Cucumbers also contain fisetin, an anti-inflammatory flavonol connected to brain health and memory, plus antioxidant flavonoids such as quercetin. Research supports their role in promoting hydration, providing skin benefits, and supporting digestive health. Sliced cucumbers help meet daily fluid needs, and water-rich foods improve hydration according to studies. Traditional practices use cucumber slices over the eyes to reduce puffiness, and they may soothe sunburns, reduce dark circles, and calm inflammation when applied topically.

The combination of water and fiber supports regular bowel movements, with most fiber found in the peel. Cucumber extracts show anti-inflammatory activity in lab and animal studies, and some compounds have demonstrated cell-killing effects against certain cancer cells in research. To increase absorption of nutrients, avoid peeling the cucumber, pair it with a healthy fat source, ferment it for gut benefits, and prioritize local seasonal ones.

Whole cucumbers last longer when excess moisture is dried, then loosely wrapped in a paper towel and stored in a partially open bag in the refrigerator crisper drawer away from ethylene-producing fruits. Pro tips include growing cucumbers at home, pressing a slice to the roof of the mouth for about 90 seconds to fight bad breath, and rubbing a slice on a bathroom mirror to prevent fogging. A simple watermelon cucumber salad combines cucumber pieces with cubed watermelon, blueberries, mint leaves, lime juice and zest, olive oil, optional honey, and sea salt.

Fresh organic cucumbers are generally safe, though people on blood-thinning medications should watch vitamin K intake, and some may bloat due to cucurbitacins. Conventionally grown ones may have pesticide residues and wax, so organic is preferred or peel if necessary. Cucumbers develop from a flower and contain seeds, making them a fruit, and Christopher Columbus introduced them to the Americas. For kids, serve cucumber sticks or slices with dips, cut into fun shapes, or use mini cucumbers that are easier to hold.

Monday marks the 27th anniversary of the commencement of the deadly persecution of the spiritual practice Falun Dafa, also known as Falun Gong, in China.
