🎂 Carrot Cake Cheesecake 🎂
A delightful mash-up of classic carrot cake and creamy cheesecake topped with a luscious cream cheese frosting. Perfect for special occasions or just because!
Ingredients:
For the Carrot Cake:
🧴 Cooking spray
🍞 1 ½ cups all-purpose flour
🍬 1 cup granulated sugar
🌿 1 tsp cinnamon
🧂 1 tsp kosher salt
🧁 1 tsp baking soda
🛢️ ¾ cup canola oil
🥚 2 large eggs, beaten
🥕 1 ½ cups grated carrots (from 1 large carrot)
🍇 ½ cup raisins
🌰 ½ cup chopped pecans or walnuts
For the Cheesecake:
🧀 2 (8-oz.) packages cream cheese, softened
🍬 ¾ cup granulated sugar
🧂 ¼ tsp kosher salt
🌾 1 ½ tbsp all-purpose flour
🍦 ½ tbsp pure vanilla extract
🥚 2 large eggs
🥄 ½ cup sour cream
For the Frosting:
🍬 1 cup powdered sugar
🧈 4 tbsp butter, softened
🧀 4 oz cream cheese, softened
🍦 ½ tsp pure vanilla extract
🌰 Chopped pecans or walnuts, for garnish
Instructions:
1️⃣ Preheat Oven:
Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
2️⃣ Prepare Carrot Cake Mixture:
In a large bowl, combine flour, sugar, cinnamon, salt, and baking soda.
Stir in oil, then add eggs and mix until combined.
Add grated carrots, raisins, and nuts, mixing until well combined.
3️⃣ Prepare Cheesecake Mixture:
In a large bowl (using a hand mixer or stand mixer), beat cream cheese and sugar until smooth.
Stir in salt and flour.
Mix in vanilla extract and eggs one at a time, beating for 1 minute between each addition. Add sour cream and mix until smooth.
4️⃣ Assemble Cheesecake:
Pour ⅔ of the carrot cake mixture into the prepared pan and smooth the top with a spatula.
Spoon ⅓ of the cheesecake mixture over the carrot cake layer.
Pour the remaining carrot cake mixture over the cheesecake layer, then top with the remaining cheesecake mixture. Smooth the top with a spatula.
5️⃣ Bake:
Bake in the preheated oven until the center is slightly jiggly, about 1 hour.
6️⃣ Cool and Chill:
Let the cheesecake cool completely for 1 hour. Transfer to the fridge and chill for at least 4 hours or overnight.
Run a knife around the inside of the springform pan and unmold from the pan.
7️⃣ Prepare Frosting:
Beat powdered sugar, butter, cream cheese, and vanilla extract until smooth.
8️⃣ Frost and Garnish:
Frost the cheesecake with the cream cheese frosting and garnish with chopped pecans or walnuts.
Let chill for an additional 10 minutes before serving.
