People have a huge fear of eating bolted lettuce, well I’m here to tell you it’s an amazing thing!!!!
Not only is it beautiful, great for insects but the way the flavour profile changes and the bitter undertones you get are amazing as a raw and cooked ingredient.
It does get bitter, so if using in salads add a sweet dressing with honey, chilli, garlic and oil to balance it out, hit of lemon juice over the top and you’re laughing.
It can also be used as a cooked ingredient, add to soups, tomato sauces, chillis, anything really and the steams are amazing. The older the plant gets the tougher the stem gets, treat it like a tough ingredient, lettuce stem fondants with loads of butter are amazing, blanch it then char it to increase those bitter tones, treat it like a cross between fennel, celery and celeriac.
Pick the right lettuce and you have endless seeds to grow on also ❤️
