While the exact age of the Jewish community of Cochin (now Kochi), a city on India’s southwestern coast, is unknown, some sources point to its earliest members arriving 3,000 years ago.

But, “In one or two decades, this tremendous heritage will be lost,” Ilanit Menachem explains.

Saving its recipes and culinary traditions is the mission of her life, she adds. Ilanit shared recipes for the Shabbat bread appam, a spicy beef dish her grandmother used to make on Friday mornings, and pastel, a fried pastry filled with spiced chicken and potatoes that Ilanit calls the “king of the Cochini cuisine.”

For Ilona Kellner, recipes were an act of resistance in the darkest of places. During the last year of World War II, when she was imprisoned at Auschwitz and later a subcamp of Buchenwald, Ilona (known as Ica) and the women she lived with were fed scraps, barely enough food to survive. But “in the evenings, they huddled together in the barracks and talked about food,” says her daughter Eva Moreimi. “Talking about food and remembering beloved family dishes gave them hope and a will to live. It was essential for their survival,” Eva writes in the memoir “Hidden Recipes.”
