LISTING FOR A FRIEND: $14,500 OBO. For sale is a 5’x14’ raised flu Evaporator, with a 5x10’ Steam-Away, forced draft, Marcland auto-drawoff, chimney pipe, spark arrestor and chimney cover, etc. It does NOT include a hood, any steam stacks, the extra chimney pipe seen in the pictures, or the red floor jacks and angle iron supports for the steam-away. It was used to boil maple sap from approximately 5800 taps at the height of the business. It is old, having been bought used in 2000 (unsure of the year of manufacture), and having sat unused for the past few seasons. Both pans have been replaced with stainless steel welded pans, the rear pan being a 5’ x10’ Grimm Lightning made in 1997, and the front pan is a Small Bros Lightning 5’ x 4’ (as seen in the pictures). It had new ceramic insulation installed in the firebox and doors last year (as seen in the pictures) in preparation for being run this past season, but the person who was supposed to run it got married and changed plans over the summer. I personally verified that the auto-drawoff and forced draft fans both still operate, and took a video of the same. The light in the steam-away does not turn on. The owner is selling due to his age and having issues getting reliable/qualified workers to run it in the current operation, so shifting to selling sap from the operation this serviced. Another cooking experiment. This time, a maple marinated corned beef brisket. I couldn't find any recipes that suited me, so I used a basic recipe and altered to suit what I thought would be good. It turned out excellent, although I don't think I used enough salt in the water, so I have adjusted for that.

You need:

Beef brisket, 2-3 pounds (mine was 2.89 lbs.)
:
For the rub:
One teaspoon garlic salt

Two shakes ground ginger

One teaspoon onion powder

3 shakes ground cinnamon

One teaspoon seasoned salt

One teaspoon black pepper

For the marinade
Two tablespoons olive oil

One tablespoon Worcestershire sauce

¼ cup white wine (I suppose one can use red if desired)

1+ tbsp Buttershots

1+ tbsp Peach Brandy

1+ tbsp Jim Beam Maple
(Total of the above 3 should be between 1/4 and 1/3 cups.

Two tablespoons apple cider vinegar

½+ cup Maple Man Products' 100% Pennsylvania maple syrup

Water for cooking:
1.5 tbsp sea salt., but will vary depending on size of brisket and amount of water.

Mix all the dry ingredients (for the Rub) and rub the entire brisket with the mix. Place in large Ziploc freezer bag.

Mix liquids together in a bowl, stir briskly, then pour over beef. Squeeze the air out of the bag and marinate overnight. Turn the brisket occasionally while marinating. (I turned mine about 5 times, 3 times before night, and twice in the morning)

The after marinating, place the brisket and marinating liquid in the crock pot, cover with water and add salt. Cook on low for eight hours or as suits you. (mine cooked for about 10)

After cooking, make several holes in the brisket with a long knife. Return it to the crock pot for a few minutes to allow the inside to be exposed to the broth.

Another successful cooking experiment. This came out even better that I thought it would. Pork Chops cooked with
1 to 2 tbsp Butter,
1/4 c Maple syrup,
Maple Chipotle Grille sauce,
Paul Masson Peach Brandy.

For two chops, place 1-2 tbsp butter in heated saucepan. Place chops in and sear one side, then turn the heat down to a medium temperature and turn chops. Poke seared side with a forl several times. Drizzle maple syrup over top of of the chops, using enough that it mostly covers the top and runs down to mix with the butter. After a 2 min or so, turn chops and repeat with less syrup. (Sijnce there will already be some in the pan) Ater another 2 mints add 2/3 shot glass of Peach Brandy to the pan. Por Maple Chipotle grille sauce on top of chops. Continue to cook for another minute or so on low-medium heat to allow the flavors to mix. Add another 1/2 shot glass of brandy, Then turn the heat up to high for a SHORT time to allow the syrup to glaze onto the meat. Pull off the stove and enjoy.

For another real treat (or as dessert, depending on your preference), pull the pork chops out and fry bacon in the remaining mixture in the pan. The mixture carmelizes to the bacon and creates a phenomenal, almost candied bacon as a result.

I still have plenty of syrup ready for your holidays. I have decorative glass bottles that make smashing gifts, and plenty of other of a more quantitative size for your cooking. Make a health promise to your family for the holidays and substitute pure Maple syrup for corn syrup in every recipe.

This is one reason why it's important to support local producers and farms.
