At the first market of the season in North Bend, a gentleman brought up a lady who used to live in Prague that made amazing kolaches. He remembered that she lived by the gas station, and while I couldn’t think of her first name at the moment, I knew who she was and her last name. I later texted my mom, Suzi Sousek, who reminded me that her name was Ruth Kuncl, and not only did she make the best kolaches, she also made the best poppyseed bear claws. It inspired me to try it myself, and they may not be on the same level as Ruth’s, but they’re still pretty dang good. You can get some this week at any of the farmers markets, starting with north bend today at 4:30. 2 for $5, and I’ll also have cinnamon bear claws as well.
Thanks for the inspiration, Ruthie!
