OKro Soup Recipe
Ingredients:
- 1 cup okro (lady's fingers)
- 1/2 cup dry fish
- 1/2 cup snails (optional)
- 2 tablespoons crayfish
- 2-3 uziza leaves
- 1 cup vegetables or bitter leaves (such as bitter leaf, uziza leaf, or spinach)
- 2-3 locust beans (dawadawa)
- 2-3 tablespoons palm oil
- 1 large onion, chopped
- 2-3 Scotch bonnet peppers or other hot peppers, chopped
- 2-3 seasoning cubes (such as Maggi or Knorr)
- Salt to taste
- Water to desired consistency
Instructions:
1. Rinse the dry fish and soak it in water for about 30 minutes. Drain and set aside.
2. Clean and prepare the snails (if using).
3. Grind the crayfish and uziza leaves together.
4. In a large pot, heat the palm oil over medium heat.
5. Add the chopped onion and sauté until softened.
6. Add the chopped peppers and sauté for another minute.
7. Add the ground crayfish and uziza mixture, dry fish, snails (if using), and locust beans. Stir well to combine.
8. Add the seasoning cubes and stir well.
9. Add water to the pot and bring to a boil.
10. Reduce the heat and add the okro. Simmer for 10-15 minutes or until the okro is tender.
11. Add the vegetables or bitter leaves and salt to taste. Simmer for another 5-10 minutes or until the leaves are tender.
12. Serve the okro soup hot with fufu, eba, or rice.
